Cavili, Cube of Butter & Zephyr squash are coming on strong at Brightside. When we think about food and antioxidants, what first comes to mind is fresh fruit and vitamin C, or colorful carrots and beta-carotene. Yet several recent studies have underscored the unique contribution made by summer squash to our antioxidant requirements. While not as rich in the more widely-publicized beta-carotene, summer squash is a very strong source of other key antioxidant nutrients, including the carotenoids lutein and zeaxanthin. Please don't peel the squash! The skin of summer squash is particularly antioxidant-rich. And, when organically-grown and freshly-picked, completely safe and terrifically tender.
Scallions prepared for tomorrow's shares. Fun fact: A single stalk supplies 16% of the recommended daily allowance of Vitamin K for a man and 22% for a woman. Vitamin K is essential for the maintenance of strong bones.
