Recipes: Super Easy Roasted Napa Cabbage; Asian Cabbage Rolls

 Nutritious Napa Cabbage
This week's share will feature gorgeous Napa Cabbage from Steve & Mary Saffel of S & S Farm. While extremely low in calories, Napa is packed with many antioxidant plant compounds such as carotenes, thiocyanates, indole-3-carbinol, lutein, zea-xanthin, sulforaphane and isothiocyanates. In addition, it's an abundant source of soluble and insoluble dietary fiber, folates, vitamins C & K, and minerals including calcium, potasssium, phosphorus & magnesium.
Now that's a vegetable!
Super Easy Roasted Napa Cabbage:  Six tbls canola oil; 3 garlic cloves, crushed; 6 cups cabbage, roughly shredded; salt and pepper to taste. Preheat oven to 450°F. Heat the oil in a skillet on low; add the garlic cloves and cook very gently for 15 minutes. Remove the garlic and toss the cabbage with the garlic-infused oil, salt and pepper. Place the cabbage on a baking sheet and bake for about 15 minutes or until the tops of the cabbage pieces are browned. Browning brings out the flavor!
Asian Cabbage Rolls: Twelve large Napa cabbage leaves, blanched.
For the stuffing: 1 lb ground pork, chicken or turkey; 1.5 cups cooked rice; 2 cups diced vegetables of your choosing (carrots, peppers, celery, radish, turnip, beets); 1 medium yellow or red onion diced; 1 tbls olive oil; 1 large egg, beaten; 2 tsp toasted sesame oil; 2 tbls soy sauce; 1 tbls grated ginger; 3 cloves garlic, minced, salt & pepper.  Cook onions, garlic, and ginger in the olive oil until the onions are softened. Add the diced veggies and cook until they start to soften, about 5 minutes. Remove from heat and let cool. Combine meat, rice, veggies, and beaten egg in a large bowl. Stir in the soy sauce and rice vinegar.
For the sauce: Whisk together two tbls soy sauce; 2 tbls rice vinegar; 1/3 cup chicken broth; 1 tbls toasted sesame oil; sriracha or other hot chili sauce (optional).
Preheat oven to 400°F.
To assemble the cabbage rolls: Lay out a blanched cabbage leaf with the stem end facing you. Place about 1/3 cup meat mixture into the stem end of the cabbage leaf. Fold in the sides and roll up the leaf, then place the bundle, seam side down, in a baking dish. Repeat with the rest of the cabbage leaves and meat mixture. Pour the sauce over the cabbage rolls. Bake for 35 minutes, or until an instant-read thermometer inserted into a roll at the center of a dish registers 160° F. Serve drizzled with the pan juices.
