Recipe Idea: Kale in Coconut Milk Heat 2 Tbls olive or canola oil in a large skillet over medium. Cook 4 crushed garlic cloves, 2 chopped shallots, 1 two-inch piece ginger, peeled and chopped, one red chile, thinly sliced (optional). Season with salt; cook, stirring often, until softened, about 5 minutes. Add one bunch kale, stems removed, leaves torn. Toss to coat. Add one cup of unsweetened coconut milk, bring to a simmer, cover, reduce heat and cook slowly until kale is tender. Those not yet sold on kale might change their minds with this dish!
