Recipe: Kale in Coconut Milk

Recipe Idea: Kale in Coconut Milk
Heat 2 Tbls olive or canola oil in a large skillet over medium. Cook 4 crushed garlic cloves, 2 chopped shallots, 1 two-inch piece ginger, peeled and chopped, one red chile, thinly sliced (optional). Season with salt; cook, stirring often, until softened, about 5 minutes. Add one bunch kale, stems removed, leaves torn. Toss to coat. Add one cup of unsweetened coconut milk, bring to a simmer, cover, reduce heat and cook slowly until kale is tender. Those not yet sold on kale might change their minds with this dish!

With only two weeks to go, we still have a nice variety of produce: Golden Delicious apples; Napa cabbage; Swiss chard; collards; fresh herbs; garlic; kale; boxed lettuce; red & yellow onions; sweet colorful peppers; radishes; shallots; Shiitake mushrooms & cherry tomatoes. New this week: Acorn Squash. We only have about a dozen, so please reply to this email to reserve yours!

However, we will be offering delivery/pick-up of pre-ordered produce, poultry, pork, eggs and value-added products on November 22, the Tuesday before Thanksgiving.
