Recipe: Curry-Spiced Sweet Potatoes

Yummy Crunchy Bok Choy
Try it! Bok Choy with Fresh Ginger & Garlic
Heat 1 tbsp olive oil in a large skillet over medium heat. Add at least 2 cloves minced fresh garlic and 1 tbsp minced fresh ginger and cook 1 minute. Add about a pound of chopped bok choy and 1 tbsp reduced-sodium soy sauce. Cook about 5 minutes, until greens are wilted and stalks are crisp-tender. Season, to taste, with salt and black pepper. Serves 4.
Spectacular Sweet Potatoes
Sweet potatoes are high in vitamin A, vitamin B5, B6, thiamin, niacin, riboflavin, and due to their orange color, high in carotenoids. They're fat-free, low in sodium, and have fewer calories than white potatoes, although they do have more sugar. Sweet potatoes are one of the best sources of vitamin A, an antioxidant powerhouse. According to the National Institutes of Health, vitamin A is linked to anti-aging benefits, cancer prevention, and the maintenance of good eyesight.
Recipe Idea: Curry-Spiced Sweet Potatoes
Place about 2 lbs of peeled and cubed sweet potatoes in a medium saucepan; cover with water. Bring to a boil. Reduce heat, and simmer 15 minutes or until tender. Drain well; return to pan. Keep warm. Melt 1 tbsp in a nonstick skillet. Add 1/4 cup finely-chopped shallots, and cook 6 minutes or until tender, stirring occasionally. Add 1 tbsp brown sugar, 1 tbsp grated fresh ginger, 1/2 tsp salt, 1/2 tsp curry powder, 1/2 tsp ground cumin, 1/4 tsp cinnamon, 1/8 tsp red pepper. Cook for a minute, stirring constantly. Add shallot mixture, 1/3 cup half-and-half, and 1 tbsp fresh lemon juice to potato. Use a potato masher to blend mixture to a desired consistency. Serves 6.  HINT: Thin leftovers with milk and vegetable broth to make a curried sweet potato soup. Top with a dollop of plain yogurt and chopped cilantro. Mmm mmm, good!
SUPER COOL TIP: Can't use all your fresh ginger root right now but want to keep it from getting woody? Put it in a freezer bag and toss it in the freezer. Bring it out to grate what you need as you need it!

Now imagine slices of tender-crisp duck served with Maple Mountain Farm pear butter. Oh, yeah.
Kohlrabi is Not as Weird as It Looks. Really!
Kohlrabi is the lesser known member of the cabbage family with a sweet and slightly peppery flavor. To prepare for storage or cooking, trim leaves and stems from the bulb. (Save them for stir fry!) The bulb is delicious chopped into cubes or wedges and roasted in the oven. Once tender, sprinkle with salt, olive oil and lemon juice before serving. Kohlrabi is also delicious raw. Use a mandolin (or an old fashioned box cheese grater) to cut paper-thin slices. These are so lovely added to salads or served alone, drizzled with olive oil and sprinkled with sea salt.
