Cook with Chard & Kale - and Turkey Time!

Get Creative with Swiss Chard
Swiss Chard with Roasted Pine Nuts & Golden Raisins
Heat a large nonstick skillet over medium heat. Add 3 tablespoons pine nuts to pan and cook until browned, stirring frequently.  Remove nuts. Add 1/4 cup golden raisins and 1/4 cup water and cook 1 minute.  Add 12 cups coarsely chopped chard. Cook 3 minutes or until chard wilts. Stir in 2 teaspoons white wine vinegar. Sprinkle with pine nuts. This recipe also works wonderfully with kale. Serves 4.
Lemony Chard & Kale Salad 
Combine 1 tbsp fresh lemon juice, 1 tbsp olive oil, 1/2 tsp sugar, 1/2 tsp pepper, and 1/4 tsp salt in a jar with a tight-fitting lid and shake until well-blended. Pour over 4 cups torn kale leaves and 2 cups torn chard leaves. Heat a skillet over medium heat. Add a tbsp of pumpkinseed OR sunflower seed kernels and cook until browned,
stirring frequently. Add 1/4 cup sliced green onions, one ounce shaved Romano, Asiago or Parmesan cheese and the toasted seeds to the greens. Toss well. Serves 6.

How Do I Store Butternut Squash?
Never in the Refrigerator! Butternut need a steady temperature of 50-55 degrees F. Wrap each squash in butcher paper so their skins aren't touching and place in a dark closet or basement. Properly stored, butternut squash will last for months.

What is the Quickest Way to Prepare Butternut Squash?
Preheat oven to 400 degrees F. Halve the squash lengthwise and scoop out seeds. Place halves flesh-side-up on a baking sheet. Place a tsp of butter in the middle of each squash. Sprinkle about a tsp of brown sugar on each half. Season with salt and pepper. Roast about 25 minutes or until fork tender.
